Finger Lakes cheese Aging Room Tour

About a dozen cheese makers and would-be cheese makers trekked by car and truck caravan in the mid-Finger Lakes area: from the first stop at Sunset View Creamery with Carmella Hoffman in Odessa, to Finger Lakes Farmstead Cheese in Mecklenburg where Nancy Richards hosted the tour of her facility -- and lunch with cheese samples; and on to Andrew Cabot's Cowlick Creamery in Lodi, ending up at Lively Run Goat Dairy in Interlaken with a busy Susanne Messmer. Our hosts were gracious and generous with information about aging room construction and use; the group was able to discern the similarities as well as differences in construction materials, heating/cooling systems, and temperature control according to the type of cheese maturing in the room.
