Other information: Our cheeses are all hand-made in very small batches from 100% grass-fed animals. All of our cheeses are made from our own raw milk and are aged in our cheese cave to produce a natural rind.

We practice low-input farming, using draft horses and mules for our hay-making and field work. Our milking flock is handled using low stress management techniques, and our animals are kept healthy without the use of chemicals or antibiotics.

We market our cheeses (and 100% grass-fed lamb and mutton) strictly to our local community through direct sales or at the Ithaca Farmers’ Market.
